- Hard shelled, deep cupped, consistent
shape
- Harvest date and harvest area are listed on
accompanying shellfish tag
Handling & Storage
- Store in cooler, between 1º to 4° C, on ice, covered
with a wet cloth, allow water to drain
- Keep accompanying shellfish tag on file for 90 days
- Ensure all oysters are alive. Discard any that do not
close when tapped with finger
