Characteristics
- Mainly from Hawaii, Mahi Mahi is common to
tropical, and sub-tropical waters around the
world, preferring waters above 20ºC
- Also known as Dorado or dolphinfish, yet is
unrelated to the marine dolphin
- A fast growing fish, skin on fillets are usually
between 3-8 pounds
- Has a sweet, mildly pronounced flavor
similar to swordfish
- Flesh is pinkish to grey-white, and cooks up
off white with a large flake
Handling & Storage
- Keep product well iced and store in cooler between 1º to 4º C, allow water to
drain
- Do not allow fish to have direct contact with ice
- Minimum shelf life is 3 days from delivery
