Characteristics
- Yellow Fin and Big Eye Tuna from Hawaii
- Skin-on, belly flap off
- Medium to dark red meat that cooks to a
tan color
- Firmness is an indication of fat content, not
quality
- Ahi loins, or “fillets” range in size from
approximately 5 to 9 lbs
Handling & Storage
- Store in cooler, between 1º to 4°C, with bloodline facing down
- Keep tightly wrapped as exposure to air will cause Tuna to turn brown
- Never allow Ahi to sit in melt water, as it will discolor the flesh
