Characteristics
- Yellow Fin and Big Eye Tuna from Hawaii
- Skin-on Top Loin has no belly seam
- Medium to dark red meat that cooks to a tan color
- Firmness is an indication of fat content, not quality
- Ahi loins, or “fillets” range in size from
approximately 5 to 9 lbs
Handling & Storage
- Store in cooler, between 1° to 4° C, with bloodline facing down
- Keep tightly wrapped as exposure to air will cause tuna to turn brown
- Never let Ahi sit in melt water, as it will discolor the flesh
